The 2023 vintage was marked by several extreme events: a winter with little snow, but with some very cold nights, several episodes of traumatic spring frosts (but minimal loss) and a summer marked by large amounts of rain. Fortunately, three beautiful unexpected weeks of good weather before the harvest allowed us to harvest grapes of very good quality.

When they arrived at the cellar, the berries underwent direct pressing. The fermentation took place cold, under the action of indigenous yeasts and in stainless steel tanks to preserve freshness and fruity aromas. After one year of aging on lees in a tank, the wine is added with a sweetened sourdough with gray frontenac must 2024 under the action of indigenous yeasts. It is during this second fermentation in the bottle that it develops its slight effervescence. More sparkling than sparkling, this re-fermented wine has a lighter effervescence than our traditional methods. The wine is unfiltered and not degorged.
