The guiding philosophy surrounding winemaking comes down to: “the fewer the interactions with a wine, the greater the wine will be”. Inspired by his time with Jean-Marc, Anders’ approach to vinification is one of intuition, tasting the grapes, thinking on what they’ve received that year, and letting the wines go their own way. Every year and every harvest is different and as such, they don’t make any wine twice. The aim is always to be “pushing toward the edge”. As Anders says “I feel when we push ourselves to our limits, when you become somehow vulnerable, that’s both where it becomes interesting and also dangerous”. There are no rules they prescribe to with the wines, but in general they are fans of blending when it feels intuitive to do so. Like a chef working with high quality ingredients, there is an aim for a balanced final dish. They are also proponents of long élévage in old barrels, and not topping up, so the wines take on an oxidative edge, which they say helps the wines be accustomed to air and makes them more stable. As always with their wines, all grapes are farmed organically with biodynamic methods, handpicked and hand destemmed. In the cellar there is no filtering, fining, or sulphur.
