Dolgo is a tannic, high acid, cranberry-like crabapple that originated in Siberia and was brought to North America in the 1800s.

They're about the size of a cranberry as well. We work with a group of foragers to pick them every year, from plots across Ontario.

What's it like?: The cider has an incredible aroma, reminiscent of wild apples, scattered on the forest floor. Energizing malic acid and chalky apple tannins lift notes of fennel seed, wet tamarind paste, citrus peel and ripe cranberry.

Dolgo crabapples are classified as bittersharp, meaning they're both high acid and high tannin. This combination is bracing, but delicious, and lends itself to being paired with fatty and protein rich foods.
