Explosive and highly charged. Senex comes from a feral orchard of 7 Gravenstein trees well beyond 150 years old, in Graton, CA. Depicted on the label is Wavoka aka Jack Wilson, a Paiute Prophet and the originator of the “Ghost Dance”. Used as a non-violent form of protest against colonial powers, it was ultimately outlawed by the US government in the 1800s, due to the empowerment and unity it brought to indigenous peoples in the west. Wakova, a wanderer, spent his 20’s as a picker in Sonoma and Mendocino and it was here he had a vision for which he earned his namesake “the seer”. The instructions in his vision was to teach his dance in order to bring unity to the indigenous peoples of the west. Macerated on skins for 2 days and transferred to old barrel for 1 year, Senex is energized and transformative. Full honeysuckle florals typical of the old Gravensteins. Phenolics and tannic grip, similar to an orange wine, the palate is dynamic and bursting with concentrated and vibrant fruit. Electric peach with lively texture provided by measured VA. Continued in the spirit of resistance.

Bardos, launched by Aaron Brown with friend Colin Blackshear in 2019, seeks to reconnect with the spiritual and agricultural past of pre-industrial northern California through a unique, zero/zero cider project. Drawing inspiration from historic UK ciders and the region's rich, complex history, they focus on reviving old orchards and traditional apple varieties with a natural winemaking approach. Their ciders, made from century-old trees with no additives and wild fermentations, are crafted to highlight the expressive and complex qualities of these heritage apples.

The ciders of Bardos tell us more than just the old varieties, but speak to the soils and the feeling of a pre-industrial California. The wild west and the mixed people who inhabited the land and helped shape it. We're proud and very excited to share their stories through the Bardos and through the medium of Apples.
