100% Chardonnay, from 15-year-old vines farmed biodynamically. The fruit of three parcels, one grown on brown clay soils, and the two others on white marls. Made from hand-picked, late harvested grapes, long fermentation in barrels on fine lees without bâtonnage. Maturation done half in 500-litre Stockinger oak vats (less than 5 years old) and half in old 225-litre barrels (10-12 years old). A microdose of sulphur at bottling. With the De Moors, the intentions are good, and the result is extraordinary.

The phrase 'L'Humeur du Temps' offers two different translations: 'The Mood of the Times' or 'The Mood of the Weather'. What remains the same, however, is that this wine is always designed to reflect the unique character of the vintage - as opposed to the singularity of the vineyard. It is a time capsule wine, that epitomises the vintage in Chablis. In this instance, 2020 - a year that was defining for many of us. 'L'Humeur du Temps' is sourced from four different, organically farmed plots and offers a unified expression of this Burgundian village. All with de Moor's emblematic vibrancy!
